Origin of Grapes: our grapes come from two plots of 50 year-old vineyards located at Villarejo de Salvanés, placed on a cool, limy soil, rich in reddish clay, and at 750m of altitude, above the Tajo and Tajuña river valleys.
Type of wine: young white wine matured on lees.
Elaboration: very unique vinification process. After removing the stalks and squeezing the grapes we make a prefermentative maceration at low temperature. Once the grape- juice is clean, slow fermentation takes place in small concrete tanks at 12-14ºC, with this technique, we avoid the loss of varietal aromas. Finally the wine matures for 120 days on its own lees.
Food Match: combines perfectly with tapas, soft cheese, fish like cod or tuna, seafood, sushi and rice.
Service Temperature: 8-12ºC.
Alcoholic Volume: 12,5% Alc/Vol.
Production: 6.315 numbered bottles of 0,75 L.
