Historical origin: Greek.

Cultivation techniques in the vineyard: pruning in the month of March- shredding waste- starting treatments in the month of May max 7 treatments up to 60 days before harvest - extensive period of pesticide disposal - milling to renew organic substance derived from herbs - chamfering according to climatic and vegetative conditions.
Grape variety: 100% Falanghina.
Harvest period: September.
Vinification: destemming and crushing - soft pressing vinification in white- controlled fermentation at 14° c - tangential filtration and sterile bottling.
Organoleptic characteristics:
colour: bright straw;
aroma: intense, fruity, fine, persistent with floral hints;
taste: characteristic, unmistakable, soft, persistent with dry acidic and aromatic aftertaste.
Chemical - physical analysis: alcool 13.50% - ph 3.20% total acidity 7.50% - net dry extract 22.00% - so2 total 90 mg/l.
Food pairing: raw and fried fish, seafood.
Ageing resistance at least: 5 years.
Serving temperature: 6 -10° c
