GRAPE VARIETIES: Ecological Manto Negro
PRODUCTION: After de-stemming, a 5 day pre fermentative maceration starts. Then the alcoholic fermentation starts for 20 days with daily pumping over. Finally the post fermentative maceration takes place for 5 days before the “débourbage”.
TASTING NOTE: Garnet color with a raspberry robe. Clean and shiny. Aromas of floral notes and ripe plums with hints of cinnamon. Soft with an ample mouth and a warm after taste with delicate balsamic notes.
SERVING TEMPERATURE: 16ºC PAIRING Chicken casseroles roast pork and roast lamb.
